Butter cookies with chocolate chunks

Recipe created by Axel Sachem - Callebaut Chocolate Ambassador Belgium

- 360g butter at room temperature
- 360g white sugar candy, sugar cane or white sugar
- 270g flour
- 200g oat flakes
- 4g salt
- 10g yeast powder
- 3 whole eggs
- 120g Callebaut Chocolate Chunks

  1. In a bowl, mix butter and sugar until fluffy.
  2. Add flour, oat flakes, salt and yeast powder.
  3. Add whole eggs lightly beaten.
  4. Finally, add chocolate chunks.
  5. Roll out in cylinders of 5 cm / 2" thick and wrap in a sheet of baking paper. Leave to rest in the fridge for 1 hour or more.
  6. Cut slices of 1 cm / 1/2" thick.
  7. Bake at 200°C / 400°F for 12 minutes.
