Caramel Ice Cream with Four-Spice Gratinéed Banana and Pineapple Recipe

Chef's Note
The French four-spice blend known as quatre-épices is a ground spice mixture usually containing (white) pepper, nutmeg, ginger, cinnamon or cloves.
Ingredients
For 4 servings
- 500 ml (2 cups) caramel or vanilla Ice Cream
- 1 tsp. four-spice blend (quatre-épices)
- 1 pineapple
- 4 mini bananas
- 1 tbsp. sugar
Method
- Peel the pineapple and slice into rounds; cut each round into quarters.
- Peel the bananas and split them in half lengthwise; cut each half in half again.
- Divide the fruit among four ramekins; sprinkle with the cane sugar and four-spice blend.
- Cook in a preheated 200° C (400° F) oven for 10 minutes.
- Cool to lukewarm and serve with a scoop of caramel or vanilla ice cream.
