Carioca Sauce Recipe
Chef's Note
Traditionally served with the Brazilian meat and bean stew known as Feijoada Completa
Ingredients
- 2 tbsp. very hot Chilis (malagueta)
- 100 ml (6 tbsp.) white rum
- Juice of 1-2 lemons, or an equivalent amount of vinegar
- Chopped parsley
- Salt
Method
- Put 2 tbsp. very hot chili peppers (Malagueta) in a bowl;
- add the white rum and vinegar or the juice of 1 or 2 lemons, depending on your taste and the size of the lemons;
- let macerate for at least 1 hour;
- crush everything into the liquid; finish seasoning with chopped parsley and salt.
