Ardenne Ham and Cranberry Compote Open-Faced Sandwich

Ingredients
For 4 servings

- 4 thick slices of multi-grain bread
- 100 g Ardenne ham, sliced
- 1 packet of sprouts (e.g., cress)

Cranberry compote
- 100 g frozen cranberries
- 4 Tbsp. sugar
- Veal stock
Method
  1. Make the compote by cooking the cranberries with a little water, the sugar and star anise until nicely thickened.
  2. Cool slightly. Remove the star anise.
  3. Spread the bread slices with cheese and place the Ardenne ham on top.
  4. Garnish with a half spoonful of cranberry compote and a small handful of sprouts.
