Chicken Stir Fry with Cashews, Baby Vegetables and Couscous Recipe

*Spices as desired:
- sweet paprika
- quatre épices or ground cinnamon
- ras el hanout
- salt and pepper
- saffron
Ingredients
For 4 servings
- 500 g (18 oz.) chicken breasts
- 1 red pepper
- 3 new onions
- 3 tbsp. oil
- 300 ml ( 1/4 cup) water
- 250 g (8 oz.) plain couscous
- 100 g (3 1/2 oz.) cashews
- 125 g (4 oz.) snow peas
- Salt and pepper
Method
Step by step

Cut the chicken breasts into strips.

Remove the seeds and ribs from the red pepper and slice it thinly. Clean the new onions and quarter them.

Heat the oil in a wok or heavy skillet. Sauté the chicken strips for 5 minutes with the red pepper and onions. Once the chicken is cooked, add the water and bring to a boil.

Off the heat, add the couscous.

Cover and let swell for 5 minutes.

Add the cashews and the snow peas ("strings" removed). Season as desired. Cook 3 minutes longer. Serve hot.
