Choucroute garnie - Sauerkraut with Assorted Meats

Ingredients for 8 servings
- 1 kg (2 1/4 lb.) uncooked sauerkraut (Cabbage)
- 1 liter (4 cups) white wine
- 4 slices of bacon
- 1 onion, thinly sliced
- 1 apple
- 5 juniper berries
- 1 bay leaf
- 3 Kassler Rippchen (thick slices of smoked pork roast)
- 1 kielbasa
  1. Cut the bacon into small cubes and sauté in a Dutch oven; add the onion and let cook for a few minutes without browning;
  2. add in all the ingredients for the sauerkraut; cover;
  3. bring the liquid to a boil; reduce the heat and let simmer for 90 minutes;
  4. place the meats on top of the sauerkraut; continue cooking 20 minutes longer.
