Chef's Note
An original idea from Philippe Mollé as part of a Bartlett pear promotion
- 2 Pears
- 30 ml (2 tbsp.) celery
- 30 ml (2 tbsp.) sugar
- 15 ml (1 tbsp.) olive oil
- 15 ml (1 tbsp.) vinegar
- 2 ml (1/2 tsp.) nutmeg
- 2 ml (1/2 tsp.) paprika
- 1 French shallot
- Juice of 1 lemon
  1. Peel and core the pears; rub with lemon juice and cut into dice;
  2. in a skillet, sauté the pears, chopped shallot and chopped celery in the olive oil;
  3. add the vinegar, sugar, nutmeg and paprika; cover and cook for two minutes, then remove the lid and continue cooking so that the juice evaporates.
  4. Refrigerate until cold.
