Fish with pesto and little vegetables in parchment Recipe

You can roll the fish up with the pesto before placing it in the parchment to give it a festive look, as in the photo.

Ingredients
For 4 servings
Parchment packets
- 1 jar of green pesto or homemade pesto
- 2 Tbsp. olive oil
- salt & pepper
Couscous
- 200 g couscous or 2 x 100 g packets TIPIAK Organic Couscous
- a knob of butter
Garnishes
- 1 zucchini
- 8 cherry tomatoes
Method
- Place 4 pieces of parchment paper on your work surface. Place a fish fillet on each one and brush one side with pesto.
- Finely dice the zucchini and halve the cherry tomatoes.
- Divide the zucchini, cherry tomatoes and peas over the fish fillets.
- Drizzle with olive oil and season with salt and pepper. Close up each packet.
- Place in a baking dish and cook in the microwave at 850W power for 6-8 minutes.
Couscous and finishing
- While the fish is cooking, prepare the couscous according to package directions. If you're using TIPIAK organic couscous, immerse the cooking bags for 90 seconds in boiling salted water.
- Remove the bags with a fork and drain 20 seconds.
- Pour the couscous into a dish, add a knob of butter and fluff with a fork.
- Place the fish and vegetables on top of the couscous and serve.
