Fish with pesto and little vegetables in parchment

You can roll the fish up with the pesto before placing it in the parchment to give it a festive look, as in the photo.

The Grain Reflex

According to the national health nutrition program, our carbohydrate intake should represent at least 50% of our daily diet. Eating a variety of grains, a source of carbohydrates, contrinubtes to a balanced diet. 

Ingredients
For 4 servings

Parchment packets
- 4 fillets of white fish - sole, cod, basa or other
- 1 jar of green pesto or homemade pesto
- 2 Tbsp. olive oil
- salt & pepper

Couscous
- 200 g couscous or 2 x 100 g packets TIPIAK Organic Couscous
- a knob of butter

Garnishes
- 8 cherry tomatoes
Method
 
  1. Place 4 pieces of parchment paper on your work surface. Place a fish fillet on each one and brush one side with pesto.
  2. Finely dice the zucchini and halve the cherry tomatoes.
  3. Divide the zucchini, cherry tomatoes and peas over the fish fillets. 
  4. Drizzle with olive oil and season with salt and pepper. Close up each packet.
  5. Place in a baking dish and cook in the microwave at 850W power for 6-8 minutes.

Couscous and finishing

  1. While the fish is cooking, prepare the couscous according to package directions. If you're using TIPIAK organic couscous, immerse the cooking bags for 90 seconds in boiling salted water.
  2. Remove the bags with a fork and drain 20 seconds.
  3. Pour the couscous into a dish, add a knob of butter and fluff with a fork.
  4. Place the fish and vegetables on top of the couscous and serve.
