Cream of Mâche (Lamb's Lettuce) with Roast Langoustines Recipe

Ingredients
Ingredients for 4 servings
- 2 baskets of Mache (Lamb's Lettuce)
- 16 large Langoustine, scampi or Dublin Bay Prawns
- 1 large white onion
- 25 g (1 oz.) shallots
- 25 g (1 oz.) mushrooms
- 150 g (5 oz.) leek greens
- 100 g (3 1/2 oz.) potato
- 50 g (3 tbsp.) butter
- 1 bouillon cube
- 500 ml (2 cups) thick crème fraîche
- Salt and pepper
- A few bouquets of mâche for garnish
Method
Preparing the cream of mâche
- Sauté the mâche, onion, mushrooms, shallots, potatoes and leek greens in melted butter.
- Season with salt, then add 1 liter (4 cups) water and a bouillon cube. After 30 minutes, purée everything in a blender and correct the seasoning.
- Add the crème fraîche at the last minute. Whisk briskly: the cream of mâche is ready.
Cooking the langoustines and presentation
- Roast the langoustine tails with no oil in a non-stick pan.
- Arrange them in bowls with some of the cream of mâche in the center.
- Garnish with mâche.
