Chef's Note

If you're not a fan of spicy food, you can increase the amount of sugar and replace the strips of chili with some grated carrot.

- 1 part rice Vinegar
- 1 part nuoc mam (fish sauce)
- Powdered sugar to taste
- A few strips (very small amount) red chili
  1. Bring all the ingredients to a boil in a saucepan over medium heat.
  2. Stir gently and continuously until the sauce thickens.
