General Tao's Chicken Recipe

Chef's Note
General Tao was renowned for his dedication to his army. To immortalize him, the Chinese gave his name to this delicious dish.
Ingredients
For 4 servings
- 5 chicken legs (drumstick and thigh) or 3 chicken breasts
- 1 Tbsp. fresh ginger, thinly sliced
- 2 shallots
- 8 green onions, cut into 7 cm (3") lengths
- 1 Tbsp. chopped garlic
- 1/2 Tbsp. dried red chili flakes or more to taste
Marinade
- 2 Tbsp. soy sauce
- 2 Tbsp. cornstarch
- 2 Tbsp. peanut oil for marinating
- 1/4 tsp. salt
- 1 egg white
Sauce
- 1 1/2 Tbsp. rice vinegar or white vinegar
- 2 Tbsp. sugar
- 2 Tbsp. cornstarch
- 2 Tbsp. soy sauce
- 65 ml (1/4 cup) chicken stock
- 1 tsp. sesame oil
Method
- Cut the chicken into small pieces.
- In a large bowl, combine all the ingredients for the marinade. Add the chicken and toss to coat well. Let marinate in the fridge for 2-3 hours.
- Heat the peanut oil in a pan and fry the chicken pieces until crisp and cooked through.
- In a wok or large skillet, sauté the ginger, garlic, shallots, green onions and chili flakes in 2 Tbsp. hot oil; stir fry, being careful that the ingredients do not burn.
- Add the chicken pieces.
- In a bowl, combine all the ingredients for the sauce. Pour over the chicken and simmer for 3-4 minutes. Serve with Thai jasmine rice.
