- 750 ml (3 cups) buttermilk
- 2 shallots, finely chopped
- 1 tsp. ground aniseed
- 5 cracked peppercorns
- 1 bay leaf
- 1 sprig of thyme
- 2 cloves
- A pinch of nutmeg
Method
- cut the meat into 2-3 cm (1") cubes and marinate in a non-reactive container for at least 12 hours;
- assemble the kebabs; grill for about 5 minutes; turn and cook 5 minutes longer.
