Our intake of carbohydrates should represent at least 50% of our daily diet. Consuming a variety of grains, a source of carbohydrates, contributes to the balance of each meal. 

For 4 servings

- 1/2 pattypan squash
- 200 g (7 oz.) Tipiak gourmet grains or couscous
- 2 lemons
- 100 g (3 1/2 oz.) mascarpone
- 100 g (3 1/2 oz.) fromage blanc
- 1/4 tsp. powdered lemon rind
- 1 tsp. honey
- 6 Tbsp. walnut oil
- salt and Szechuan pepper
  1. For the sauce, combine the mascarpone with the fromage blanc, the juice and zest of one lemon, the powdered lemon rind, honey and a pinch of salt.
  2. Peel the pattypan squash and pumpkin and cut the flesh into small cubes.
  3. Sauté over high heat in walnut oil in a skillet with the juice of the remaining lemon (before squeezing, grate the zest and set aside). Season with salt and pepper. Stir often.
  4. Prepare the grains or couscous according to the package directions.
  5. When the vegetables are nicely colored, add the grated lemon zest and the grains off the heat . Mix well.
  6. Serve with the cold sauce.
