Chef's Note


You can prepare several little dishes of sauce by adding parsley, shallot and lemon juice, curry, chives or even raspberry vinegar.

Present the various mayonnaises in glasses or ramekins, accompanied by crudités.

For 6 servings

- 1/2 egg yolk
- 1/2 tsp. mustard
- 6-8 tbsp. canola oil
- 200-300 g (7-10 oz.) Fromage blanc or Baker's cheese (0%)

For the variations
- 1 shallot, finely chopped
- 1/2 bunch parsley
- Juice of half a lemon
- 1/2 bunch chives
- 1 tbsp. raspberry vinegar
  1. Place the half egg yolk, mustard, salt and pepper in a bowl.
  2. Whisk well, gradually incorporating the canola oil.
  3. Add the fromage blanc.
