Mango Sorbet with Ginger-Scented Dried Fruit and Pear Tartar Recipe

Ingredients
For 4 servings
- 500 ml (2 cups) mango sorbet (see Ice Cream)
- 3 cm (1 1/2") ginger root
- 2 pears
- 4 dried fis
- 5 dried apricots
- 4 prunes
Method
- Quarter the pears. Remove the core and seeds and peel the wedges, then dice.
- Dice the dried fruit as well. Combine with the pears.
- Peel the ginger root and put through a garlic press to extract the pulp and juice. Add to the fruit mixture and combine.
- Place into ramekins and top with a scoop of mango sorbet.
