Mango Sorbet with Ginger-Scented Dried Fruit and Pear Tartar

Ingredients
For 4 servings

- 500 ml (2 cups) mango sorbet (see Ice Cream)
- 3 cm (1 1/2") ginger root
- 2 pears
- 4 dried fis
- 5 dried apricots
- 4 prunes

Method
  1. Quarter the pears. Remove the core and seeds and peel the wedges, then dice.
  2. Dice the dried fruit as well. Combine with the pears.
  3. Peel the ginger root and put through a garlic press to extract the pulp and juice. Add to the fruit mixture and combine.
  4. Place into ramekins and top with a scoop of mango sorbet.
