Maple Vinaigrette Recipe
Chef's Note
Sweet and savory, this dressing can be used on salad greens, whether head lettuce, Boston or curly leaf, served on their own or accompanied by cold meat such as pork or lamb.
Prepare the dressing like a classic French vinaigrette. If you don't have maple syrup, you could use honey. The flavor will be very different, but still delicious.
Ingredients
- 1 tbsp. strong mustard
- 2 tbsp. Maple Syrup
- 2 tbsp. crème fraîche or heavy cream
- 2 tbsp. Balsamic vinegar
- 200 ml (3/4 cup) vegetable oil
Method
- In a bowl, whisk together 1 tbsp. strong mustard, 2 tbsp. maple syrup, 2 tbsp. heavy cream or crème fraîche, 2 tbsp. balsamic vinegar;
- slowly add 200 ml (3/4 cup) vegetable oil, whisking constantly, until smooth;
- toss with the salad greens.
