Chef's Note

Prepare at the last minute so that the bread sticks stay crisp. Bake the grissini and blue cheese in the oven, wrapping them in a half sheet of brick pastry.

*Grissini are long crusty Italian breadsticks that you can find in the import section of your supermarket.

For 4 servings

- 150 g (5 oz.) blue cheese (suggestion: Bresse Bleu)
- 4 grissini (bread sticks)
- 100 g (3 1/2 oz.) (8 slices) pancetta or prosciutto
- Pepper
  1. Cut the blue cheese into 8 pieces and remove the rind.
  2. Take each piece of cheese and stick it onto a half breadstick.
  3. Fold the slice of pancetta in half and wrap around the cheese tightly.
  4. Sprinkle with a pinch of pepper as an hors d'oeuvre.
