Pear Salsa Recipe

A recipe from Bruce Hanna, Harbour Castle Sheraton, Toronto. Serve with duck or venison.
Ingredients
- 2 pears
- 2 shallots, finely diced
- 2 Oz (4 tbsp) Whole Butter
- 1 Oz (2 tbsp) Brown Sugar
- 1 Sprig Rosemary, leaves taken of stem and chopped
- 1 Sprig Thyme Leaves taken of stem
- ½ Oz (1 tbsp) Rice Wine Vinegar
- 4 Oz (8 tbsp) Apple Cider
- Sea Salt and Cracked Black Pepper to Taste
Method
- Peel and core pear, chop into fine dice.
- Quickly sauté with butter and sugar to golden color.
- Add remaining ingredients and cook for two to three minutes until partially soft. Season to taste. Cool.
