Chef's Note

A recipe from Bruce Hanna, Harbour Castle Sheraton, Toronto. Serve with duck or venison.

- 2 pears
- 2 shallots, finely diced
- 2 Oz (4 tbsp) Whole Butter
- 1 Oz (2 tbsp) Brown Sugar
- 1 Sprig Rosemary, leaves taken of stem and chopped
- 1 Sprig Thyme Leaves taken of stem
- ½ Oz (1 tbsp) Rice Wine Vinegar
- 4 Oz (8 tbsp) Apple Cider
- Sea Salt and Cracked Black Pepper to Taste

  1. Peel and core pear, chop into fine dice.
  2. Quickly sauté with butter and sugar to golden color.
  3. Add remaining ingredients and cook for two to three minutes until partially soft. Season to taste. Cool.
