Prawns with Mango and Hot Sauce Recipe

Ingredients
Ingredients for 4 servings
- 16 raw prawns (Shrimp)
- 1 Mango
- 2 onions
- 3 green onions (scallions) or 10 chives
- [Hot sauce]
- 2 tbsp. vegetable oil
- 8 sprigs of cilantro
Method
- Peel the prawns; make an incision along the length of the back of each prawn without cutting it completely in half. Devein.
- Peel and mince the onions and green onions.
- Peel the mango, cut it in half, remove the pit and dice the flesh.
- In a skillet, heat the oil and sauté the onions briskly for 2 minutes.
- Add the prawns and stir fry for 2 minutes.
- Add the hot sauce and the mango, mix well and cook over low heat for 2 minutes.
- Add the chopped cilantro and serve immediately, alone or with white rice.
