Prawns with Mango and Hot Sauce

Ingredients for 4 servings
- 16 raw prawns (Shrimp)
- 1 Mango
- 2 onions
- 3 green onions (scallions) or 10 chives
- [Hot sauce]
- 2 tbsp. vegetable oil
- 8 sprigs of cilantro
  1. Peel the prawns; make an incision along the length of the back of each prawn without cutting it completely in half. Devein.
  2. Peel and mince the onions and green onions.
  3. Peel the mango, cut it in half, remove the pit and dice the flesh.
  4. In a skillet, heat the oil and sauté the onions briskly for 2 minutes.
  5. Add the prawns and stir fry for 2 minutes.
  6. Add the hot sauce and the mango, mix well and cook over low heat for 2 minutes.
  7. Add the chopped cilantro and serve immediately, alone or with white rice.
