Orange California Prune Stuffing

Chef's Note

An easy-to-make and very tasty stuffing to flavor poultry - turkey, chicken or goose.

For 4 to 6 servings

- 60 ml / 1/4 cup butter
- 2 celery stalks, diced
- 1 small onion, diced
- 750 ml / 3 cups coarse bread crumbs
- 1 large orange
- 60 ml / 1/4 cup California prunes, chopped
- 1 egg, beaten
- 1/2 Tsp. each of : dried sage, thyme, salt & pepper

  1. Preheat oven to 200°F / 400°F.
  2. In a medium saucepan, melt butter and sauté the celery and onion until soft.
  3. Grate rind from orange. Peel orange and cut segments in half.
  4. Add rind and orange pieces and bread crumbs ; mix well.
  5. Remove from heat. Add prunes, egg, seasonings and mix thoroughly.
  6. Spoon stuffing into a greased ovenproof dish and bake for 30 minutes until golden.
