Sainte Maure de Touraine Goat Cheese Mille-feuille with Figs Recipe

Ingredients
For 4 servings
- 1 onion
- 10 figs
- 1 Tbsp. honey
- 100 ml / 6 Tbsp. water
- 20 g butter
- pepper
Tuiles
- 1 Sainte Maure de Touraine (250 g) goat's cheese, sliced
- 80 g de fromage blanc
- 2 egg whites
- 2 Tbsp. fresh herbs, finely chopped and mixed
Method
- In a saucepan, slowly cook the minced onion until soft.
- Add the coarsely chopped figs, honey and water; cook over low heat for 15 minutes to form a compote.
- Combine the fromage blanc, egg whites, herbs and pepper into a smooth mixture.
- To make the tuiles, spread the fromage blanc mixture in small discs on a parchment lined baking sheet.
- Bake for 5 minutes in a preheated 200° C/400° F oven; cool.
- Assemble the mille-feuilles by alternating slices of goat's cheese with the herb tuiles and fig compote.
