Sesame Daikon Sauce - Goma-dare Recipe

Ingredients
For 625 ml (2 1/2 cups) sauce
- 85 g (3 oz.) Sesame seeds
- 175 ml (3/4 cup) dashi
- 125 ml (1/2 cup) finely chopped scallion
- 2 tbsp. mirin
- 2 tbsp. sake
- 1 tbsp. sugar
- 6 tbsp. dark soy sauce
- 250 ml (1 cup) grated daikon (white radish)
Method
- toast the sesame seeds in a 200°C / 400°F oven until golden brown, or toast them in a non-stick skillet;
- mash the sesame seeds in a mortar; add the other ingredients except the scallions and daikon - you can also use a food processor for this step;
- place the daikon and scallions in a bowl and pour the sesame mixture over top.
