Sesame sauce - Cho Kanjang

Chef's Note

In Korean tradition, the sauce is served in small individual bowls as an accompaniment to grilled meat or a rice dish or to flavor vegetables.

- 90 g (3 oz.) lightly toasted Sesame seeds
- 1 1/2 tbsp. sugar
- 3 tbsp. herb vinegar or lemon juice
- 3 tbsp. light Chinese Soy Sauce or Soya Sauce
- 1 clove of garlic
- 2 shallots, finely chopped
Method
  1. Toast the sesame seeds in a non-stick skillet for 3-4 minutes; cool and grind in a mortar;
  2. add the other ingredients and mix well until the sugar is dissolved;
  3. pour into bowls.
