Shrimp, Pear and Snow Pea Sauté

Ingredients for 4 servings
- 2 French shallots, thinly sliced
- 10 ml (2 tsp.) olive oil
- 125 ml (1/2 cup) String Beans, tipped
- 3 tbsp. dry white wine
- 450 g (1 lb.) medium Shrimp, peeled and deveined
- 2 California Bartlett Pears, quartered
- 1 tbsp. unsalted butter
- 2 1/2 to 3 tbsp. fresh orange juice
- Salt and pepper to taste
  1. In wok, cook the shallots in the olive oil over moderate heat 2 minutes.
  2. Add snow peas and wine and cook 2 minutes, stirring occasionally. Add the shrimp, pears, butter and orange juice and cook 1-2 minutes stirring occasionally.
  3. Season with salt and pepper and serve immediately.
