Chef's Note
The cooking of the Canary Islands is based on a number of native ingredients and is naturally influenced by the west coast of Africa as well as by products brought there by Castillian Spaniards. Mojos are uncooked sauces found in countless variations, served with baked potatoes or fish that is boiled, fried or even cooked in the mojo sauce.
