An original recipe from Louis Osteen, former chef of Louis's Restaurant and Bar in Charleston, SC

Use this marinade on vegetables, chicken, pork or some shellfish.

- 125 ml (1/2 cup) Watermelon juice
- 125 ml (1/2 cup) balsamic vinegar
- 60 ml (1/4 cup) brown sugar
- 60 ml (1/4 cup) Soy Sauce or Soya Sauce
- 2 tbsp. vegetable oil
- 2 tbsp. Dijon mustard
- 2 cloves of garlic, minced
  1. Combine all the ingredients and marinate the chicken or shellfish for a few hours before grilling;
  2. Brush the ingredients with the marinade as they cook.
