Whipped Baker's Cheese with Raspberries, Raspberry Sorbet and Crumbled Macaroons

Ingredients
For 4 servings

- 500 ml (2 cups) raspberry sorbet
- 8 macaroons, plain, strawberry, raspberry or pistachio
- 100 g (3 1/ 2oz.) fresh raspberries (Raspberry)
- 1 tbsp. green pistachios
- 2 tbsp. powdered sugar
Method
  1. Grind the pistachios in a small food processor.
  2. Crumble the macaroons into the bottom of 4 glasses.
  3. Whip the baker's cheese with the sugar and pour over the crumbled macaroons.
  4. Cover with fresh raspberries and sprinkle with ground pistachios.
  5. Top with 2 small scoops of raspberry sorbet and serve immediately.

Variation
Whip the sweetened baker's cheese with a tablespoon of rosewater - it's delicious!
