Chef's Note
This traditional spice blend harbors all the flavors of the East. It is used to sprinkle on vegetables and grilled meats and to flavor meatballs. Mixed with a little olive oil, zahtar is brushed on bread before baking.
In Lebanon it is known as "Thym-zaatar baladi." It is used to flavor:
Chich Taouk - Grilled Chicken, shish kebabs, Lebanese pizza with thyme and labneh (drained yogurt).

Method
Grind together in equal quantities sumac seeds, sesame seeds and ground thyme.
