Acai Bowl with California Prunes Recipe

Chef's Note
Following the craze for kale, quinoa and chia seeds, and fermented foods beneficial to our microbiota (intestinal flora) like kimchi and sauerkraut, 2019 is shifting the spotlight to plates half-filled with fruits and vegetables, with the other half containing both proteins - like meat, fish, tofu, eggs, yogurt, legumes and almonds - and whole grains, such as bread, pasta or rice.
Since we should eat more fruit daily, why not try this acai bowl with California prunes full of super power ingredients to start your day?
Ingredients
For 1 serving
Smoothie
- 1 frozen banana
- 5 prunes
- 250 ml / 1 cup acai purée or other frozen fruit
Garnishes
- 2 prunes cut into strips
- 1 Tbsp. goji berries
- 1 Tbsp. cashew nuts
- A handful of raspberries
- pineapple slices
- coconut shreds
- mint leaves
Method
- Pour boiling water over prunes and set aside for 5 minutes.
- Put frozen banana, hot prunes and acai puree into the blender and blend well.
- Pour smoothie into a bowl.
- Place slices of pineapple, coconut shreds, prunes , raspberries, cashew, goji berries and mint leaves on top of smoothie.
- Serve immediately
