Chicken Breast Pudding

Ingredients
For 5-6 servings

- 500 g (18 oz.) Chicken breast
- 1 liter (4 cups) water
- 1.5 liters (6 cups) milk
- 300 g (10 oz.) sugar
- 120 g (4 oz.) rice flour
- A pinch of salt
- 1 tsp. cinnamon
Method
  1. Cook the chicken in gently simmering water;
  2. combine the flour and milk in a saucepan; add the sugar and a pinch of salt; place over low heat and stir constantly until thickened, about 10 minutes;
  3. when the chicken is tender; drain it and add to the white sauce; mix vigorously with a wooden spoon, mashing the chicken to break it up as much as possible;
  4. pour the pudding into a deep dish sprinkled with sugar;
  5. brown in the oven for a few minutes;
  6. cool; cut into squares and serve cold, sprinkled with cinnamon.
