Gingerbread Honey Cookies – Mézeskalács Recipe

Chef's Note
Making crunchy gingerbread is a very ancient tradition handed down from one generation to the next, and which continues to this day.
Ingredients
Dough
- 500 g flour
- 3 eggs
- 120 g butter
- 125 ml warm honey
- 200 g sugar
- 1 tsp. baking soda
Spices
- 1 tsp. ground cinnamon
- 1 tsp. ground ginger
- ½ tsp. ground cloves
- ½ tsp. allspice (optional)
- ½ tsp. grated nutmeg (optional)
- 1 pinch black pepper (optional)
Icing
- 200 g icing sugar
- 1 egg white
- 1 pinch salt, to preserve whiteness
- 2-3 drops lemon juice, for shine
- 1 Tbsp. cornstarch
Method
Step 1
- In a bowl, combine all the ingredients for the dough except the flour using a wooden spoon.
- Gradually blend in the flour, stirring constantly.
Step 2
- Cover and let rest for 1 hour in a cool place.
Step 3
- Roll the dough out to a 4-5 mm thickness.
- Using cookie cutters, cut out shapes such as Christmas trees, angels or stars.
Step 4
- Place the cookies on a parchment-lined baking sheet.
- Bake in a 210° C/425° F oven for 8-10 minutes until golden brown. Let cool.
Step 5 - Decorating
- In a bowl, whip the egg white until it forms peaks.
- Gradually beat in the icing sugar to form a thick, but still slightly runny, mixture.
- Transfer the icing to a piping bag fitted with a very small tip.
- Use your imagination to decorate the cookies with lines, circles or curlicues, depending on the shape.
