Grapefuit with Ginger Recipe

Chef's Note
An excellent way to prepare this citrus fruit. In Korea it is served for dessert instead of for breakfast.
Ingredients
Method
- Peel the ginger root; cut into thin rounds; cut each round into thin strips;
- bring 200 ml (3/4 cup) water to a boil; add the ginger; simmer over low heat for 5 minutes;
- drain the water from the saucepan and pour another 200 ml (3/4 cup) boiling water over the ginger; simmer another 5 minutes; add the sugar and continue simmering until the sugar is dissolved; reduce the heat and continue cooking until the water has completely evaporated, leaving only a thick syrup;
- cool;
- cut the grapefruits in half; detach each segment with a grapefruit spoon;
- top with the ginger in syrup and serve.
