Maple-Glazed Chicken Recipe

A traditional recipe drawn from the specialties of Pierre Faucher of the Sucrerie de la Montagne in Rigaud, Quebec
Ingredients
For 4 servings
- 2 kg (4 1/2 lb.) chicken
- 3 Tbsp. flour
- 2 Tsp. paprika
- 1/2 Tsp. nutmeg
- 125 ml / 1/2 cup butter
- 250 ml / 1 cup maple Syrup
Method
- Combine the flour, paprika, pepper and nutmeg; coat the chicken with this mixture.
- Heat some butter in a Dutch oven. Brown the chicken on all sides and remove it.
- Deglaze the pan with maple syrup.
- Return the chicken to the sauce and add a little hot water.
- Place into a 180°C / 350°F oven and cook for about 2 1/2 hours, uncovered.
- Baste the chicken several times, turning occasionally.
