Ricotta
Ricotta cheese is a mild fresh Italian cheese with a soft texture, made from twice-cooked milk-traditionally sheep's milk (The word ricotta means "recooked") although cow's milk ricotta is far more common. Ricotta is a popular ingredient in many Italian savory preparations like lasagna and manicotti, as well as desserts like cassata and cheesecake.
