Spring onions have bright green stalks and small, immature while bulbs, both of which are edible. They offer a light, sweet onion flavour since they are picked early in their growth, before the sulphurous compounds develop.

How do you tell a scallion from a spring onion?
The former doesn’t form a bulb, but only flares slightly at the base. The spring onion, on the other hand, has a well-formed white pear-shaped bulb. These are the young onions harvested before maturity and sold in bunches.
