Fruit, Vegetable and St. Agur Tartare Recipe

Ingredients
- 150 g Saint Agur cheese, cut into cubes
- 1 peach, pitted and cut into cubes
- 6 fresh apricots, pitted and cut into cubes
- 60 g fresh red currant, stems removed
- 120 g melon, cut into 1 cm cubes
- 60 g raw carrot, julienned
- 120 g green beans ,cooked in salted boiling water and cut into 2 cm lengths
- 400 g eggplant, peeled
- 90 g celery, peeled, sliced on the diagonal, and cooked in salted boiling water (keep it crunchy)
- 80 g maple syrup
- 50 g white balsamic vinegar
- 100 ml olive oil
Method
Eggplant
- Cut the eggplant into 1 cm cubes, sprinkle with salt, and let drain on paper towels for one hour.
- Brown in a skillet in olive oil, remove and cool.
Maple syrup
- Combine the maple syrup with the vinegar and season with Espelette chili.
Serving
- Combine all the fruits and vegetables in a large bowl and dress with the maple syrup mixture. Sprinkle the cubes of St. Agur on top; serve cold.
