Ingredients
- 150 g Saint Agur cheese, cut into cubes
- 1 peach, pitted and cut into cubes
- 6 fresh apricots, pitted and cut into cubes
- 60 g fresh red currant, stems removed
- 120 g melon, cut into 1 cm cubes
- 60 g raw carrot, julienned
- 120 g green beans ,cooked in salted boiling water and cut into 2 cm lengths
- 400 g eggplant, peeled
- 90 g celery, peeled, sliced on the diagonal, and cooked in salted boiling water (keep it crunchy)
- 50 g white balsamic vinegar
- 100 ml olive oil
Method
Eggplant
  1. Cut the eggplant into 1 cm cubes, sprinkle with salt, and let drain on paper towels for one hour.
  2. Brown in a skillet in olive oil, remove and cool.

Maple syrup

  1. Combine the maple syrup with the vinegar and season with Espelette chili.

Serving

  1. Combine all the fruits and vegetables in a large bowl and dress with the maple syrup mixture. Sprinkle the cubes of St. Agur on top; serve cold.
